The dishing tool is used in wheel building to make sure that the rim and hub are centered. This means that the rim is positioned exactly between the axel ends of the hub.
Dishing tools come in a variety of shapes and sizes, but all do the same thing. They outer ends of the dish tool rest upon the side of the rim, while some sort of measuring screw or other instrument at the center of the tool measures the distance from the tool to the surface of the hub locknut or outer edge of the hub.
